Roast Chicken Stuffed with Mozzarella, Pesto and Cherry Tomatoes

Mum has been a busy bee at work lately, so I thought I'd make her something tasty for dinner!

This is so so simply to make,
Simply pre-heat the oven at 180 degrees
Slice each chicken breast (same as number of guests) like a sandwich
Spread with pesto, then layer with mozzarella and cherry tomatoes
Bake until the chicken cooked through (white)
Take out of the oven, glaze the top with butter and cook for a further 5 minutes.

I've served this on a bed of salad, but would be lovely with homemade wedges for hungry hungry hippos.

Chorizo & Chicken Frittata

Another quick & easy dinner for your hungry hungry friends...


Ingredients (for one large Frittata which serves 2/3):
2 Chorizo Sausages
1 Chicken Breast
6 Eggs
100 ml of Double Creme
2 Potatoes
1 Red Pepper
1 Large Onion
A Handful of Cherry Tomatos
Parmesan Cheese 
Olive oil
Salad As a Side

Make sure the frying pan can be put under the grill.

Recipe:
1) Peel & chop the potatoes into biteable cubes. Boil until cooked.
2) Cut the chicken & chorizo sausages into biteable chunks & fry with the onion until meat is cooked & onions are golden. Add the potatoes to the pan.
3) Cut up the pepper & tomatoes, add to the fry up.
4) Beat the eggs with the cream. Pour over the fried food. Cook on the hob until egg is cooked underneath.
5) Grate the parmesan onto & grill until the egg is full cooked throughout the frittata.
6) Serve hot with a salad.

Red Peppers Stuffed with Apricot & Feta Couscous

I've been meaning to blog about this dinner for a little while...


Although, I cannot take complete credit for it!

It's delicious! (And 'serves 4 as a main' is a very generous helping!)

I simply, hollowed out the peppers, sprayed them with frylight & baked in the oven for about 15 minutes on 180 Degrees.
Whilst the peppers were cooking, I made the couscous.
I then removed the peppers from the oven, added the couscous & put back in the oven for another 10 minutes.
Covered the plates with mix leaf salad, added the stuff peppers & served with sweet chilli sauce! 
A nice and healthy nom nom nom..
